A dish for tomorrow....

Image and recipe for hummus and green sauce thanks to 101 Cookbooks. For the first time ever, I cooked beans! It is embarrassingly simple. To quote Ilona, "Who knew?" Unfortunately, I don't have the parsley this recipe calls for and will pick some up tomorrow. I tried cilantro, but let's just leave it at Italian parsley is on my grocery list. And the finished product will be part of my daily report tomorrow.

The daily report:
B: 1 c spinach, 1/2 black beans, 1/4 c chicken, 1 ww tortilla = 3
S: 1 c ff yogurt, 1 apple, 1 banana, 1 T pb, 1/4 c oatmeal = 7
L: 1 c cooked cheese tortellini, 1/2 c tomatoes, 1 c cooked spinach, 1 c raw red bell pepper = 5
S: 1 envelope of tuna, 1 T mayo, 3 egg whites, 1 slice ww toast = 4
D: 1 c ww spaghetti, roasted zucchini & red bell pepper, 2 t evoo = 5
S: 1 c milk, 1/2 c cereal, 1/2 grapefruit = 4
Total = 28
Exercise: Walked 55 minutes

yum! i have been planning a hummus post too. But another blog I like to read posted about hummus and now you. I have been eating the "eat to live" diet which is totally vegan and tons of beans. so Hummus is a new staple in my diet. It is so funny how bloggers seem to be on the same "kick" sometimes with their posts! Oh- and I ate warm beat and apple sald last night and thought of you. beets....mmm........
